'Food should carry influences of place'

Getting overwhelmed with the spices and smells in local market, internationally acclaimed gourmet chef Marc Thuet says from now on he will retain the flavours of India.
"It is incredible. Your city, the marketplace I visited are teeming with people. The food should carry these influences of a place," the well known TV personality, on a visit to the city, says.
"Food has no borders. There is no politics about food. Food always brings friends," says Thuet, having partnered Biana Zorich to run a growing chain of gourmet bakeries in Toronto
"No matter where you are, food can always be food only. Food is family. You rustle up French dishes with Indian garlics," Thuet, the host of television series 'Convictions Kitchen' recording their rise to success, said.
Having been bowled over by Phuchka and Chicken roll in Kolkata during their brief visit, Thuet says "Your street food can never be replicated in any other city.
"But it is as much yummy as the street food in Toronto or Napoli," Thuet, who got introduced to the 'Tandoori' dishes during his maiden visit to The Hub in Taj Bengal said.
"The taste of Indian cuisine may be different from the ones in Quebec province but I would love to blend the smell and tanginess of Indian food with the subtleness of French cuisine once I am back," Thuet said.
