Simon, who was diagnosed with terminal colon cancer in 2012, will have his final months filmed by the Fusion network, the Hollywood Reporter said.
The programme will focus on Simon's struggles with cancer and his fight for animal rights. He spent a large proportion of his fortune defending vulnerable animals.
He also founded the Sam Simon Foundation, an organisation that saves starving humans and stray dogs.
Simon worked on 'The Simpsons' until 1993, but remained an executive producer.
He has also worked on 'Taxi', 'Cheers', 'The Tracey Ullman Show' and 'The Drew Carey Show' and has received nine Emmy awards.
